Chia Raisin Carrot Bran Muffins

Directions
Mix together wheat bran, yogurt, and milk. Set aside for 10 minutes. Meanwhile, in a small bowl mix together oil, egg, sugar and vanilla extract to add to the bran mixture. In a small bowl mix the flour, baking soda, baking powder, and salt. Mix into bran mixture just until blended. Fold in raisins, carrots, chia seeds and spoon batter into prepared muffin pan. Bake 15 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
