Vegan Banana French Toast

8 slices Whole Wheat bread2 small ripe bananas1cup soy milk (plain or Vanilla)Ground CinnamonGround NutmegI can't believe it's not butter, original buttery spray (or equivalent).
1. Blend bananas, soy milk, 1 Tbsp Cinnamon and nutmeg in a blender or food processor
until there are no lumps and the consistency is very smooth. Pour mixture into a shallow bowl.
2. Heat frying pan or griddle over medium high heat. Apply a light coating of I can't believe it's not butter cooking spray or equivalent. Dip bread quickly into mixture (to avoid the bread getting soggy) and cook until golden brown on both sides.
3. Sprinkle the remaining cinnamon on the French toast before serving.
Makes 4 2 slice servings.
