Tomatoes and basil soup

Ingredients
10.0 tbsp Heavy Whipping Cream30.0 Grams Basil5.0 clove Garlic1.0 cup, chopped Onions, raw3.0 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average3.0 cup Chicken stock, home-prepared2.0 tbsp Extra Virgin Olive Oil3.0 tbsp Carrington Farms Organic Coconut Oil2.0 cup Tomatoes - sm cherry tomatoes
Directions
1. Roast Cherry tomatoes with some olive oil in grill or broiler 2. Heat coconut oil in the sauce pan and once heated add garlic and onions 3. Once onions are light brown, add the chopped tomatoes 4. Add the roasted tomatoes and basil and spices 5. Add chicken stock and cream and let simmer for 10 to 15 minutes 6. Once done, use a hand blender to blend till smooth. Serving Size: Makes 6 servings
