Kenny's Carrot Coconut Soup

Ingredients
900 grams Carrots, raw 2 medium (2-1/2" dia) Onions, raw 4 cup Campbell's low sodium chicken broth 4 tbsp Thai Chili Sauce 1 stick Butter, unsalted 2 cup Rooster Brand Coconut Milk
Directions
Melt butter in big pot. chop carrots and onion. add t pot. cook 15 minutes until carrots and onions are softened. Add broth and bring to boil. Simmer 30 minutes. Add coconut milk (should say 2-13.5 oz cans) and thai sauce. simmer 15 more minutes. Allow to cool a bit ans use a food procsessor/blender/emulsifier to purre.
