Easy Vegan Banana Muffins from the Spruce eats

Ingredients
1 medium (7" to 7-7/8" long) Banana, fresh .25 cup Coconut Oil 1 cup, packed Brown Sugar 1 cup Whole Wheat Flour 2 serving Bob's Red Mill Gluten Free Rolled Oats 1 tsp Salt 1 tsp Baking Soda 1 cup, chopped Walnuts
Directions
Heat the oven to 360 F and prepare a 12-cup muffin tin by either lining or lightly coating it with nonstick spray.

In a large bowl, mash the bananas with a fork till soft.

Add the oil and sugar and then cream them with the bananas.

In a separate bowl, combine flour, salt, and baking soda.

Add flour mixture to the banana mixture, stirring gently.

Gently fold in half the chopped walnuts.

Spoon batter into the lined muffin tin. Sprinkle the remaining walnuts on top just before baking.

Bake for about 25 minutes, or until a toothpick inserted into a muffin comes out clean.
