Au Poive Sauce using canned coconut milk

Ingredients
4 tbsp chopped Shallots 1/2 oz Liquor, 90 proof, scotch/bourbon 1 cup Beef Broth1/2 cup Canned Coconut Milk 1.5 tbsp Olive Oil
Directions
To make the sauce: Add olive oil to the pan. Add shallots and sauté for a minute or so, stirring, until they begin to brown. Add broth and bring to a brisk simmer. Add Cognac and continue to simmer until reduced by half, 3 to 4 minutes. Stir in coconut milk (canned) and cook until sauce is lightly thickened. Serve.
