1 tsp Vanilla Extract 1/2 cup Whole Foods All Natural Peanut Butter 1.5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can) - about the amount in a whole can, just use whole can.1/3 cup erythritol/swerve
Cook together can of coconut milk and swerve until it cooks down and thickens some, about 20 minutes.
Stir in vanilla and then peanut butter.
Line a loaf pan with parchment paper or foil. Pour in mixture. (if desired, let cool slightly, then add some Lily's sugar free chocolate chips on top, calories not included)
Freeze for about 1 hours; put in refrigerator for another 1-2 hours, then lift out of pan and cut.
