Vegetable Lasagne

Ingredients
6 lasagne noodles, cooked3 cups raw cauliflower, chopped3 cups raw broccoli, chopped3 cups raw carrots, chopped1 cup raw onions, chopped2 cans of mushrooms1 jar spaghetti sauce8 oz shredded mozarella cheesei 16 oz container of fat free cottage cheese
Directions
Heat oven to 350 degrees. Cook lasagne noodles to package directions. Spray a lasagne pan with cooking spray. spread a small amount of spaghetti sauce on bottom of the pan. Place three noodles on bottom of the pan. Spread half of cottage cheese on noodles and layer with half the vegetables. Sprinkle with half of the mozzarella cheese and pour half of remaining spaghetti sauce and spread out with a spoon. Layer remaining noodles on top of sauce, spread rest of cottage cheese , remainder of vegetables and rest of spaghetti sauce to make last layer. Sprinkle reaminder of mozzarella. Bake at 350 degrees for an hour. Cut into 8 squares and serve. Makes 8 servings
