creamy pasta sauce

Ingredients
2 cloves garlic1 medium onion1 medium eggplant1 tbsp olive oil1/2 cup red wine1 large can of tomatosalt and pepper to taste
Directions
Step 1- heat olive oil in non stick pan. Chop onion, garlic and eggplant, saute until soft.
Step 2- increase heat and add wine. Boil down and add tomato's when wine in almost evaporated. Simmer at medium heat for 1/2 hour.
Step 3- Remove from heat. Blend in food processor or use an immersion blender until smooth. Heat for an additional 20 minutes. Serve with vegetables, pasta, eggs or rice.
