Mediterranean Gumbo Soup (crockpot)

Ingredients
1 medium onion, chopped1/2 medium green pepper, chopped2 cloves garlic, minced1 can (14.5 oz) tomatoes, diced & UNDRAINED2 cans (14.5 oz ea) chicken broth1 can (8 oz) tomato sauce1 can (2.5 oz) mushrooms1/4 cup green olives1/2 cup orange juice1/2 cup white wine (optional)2 bay leaves1 tsp basil1/8 tsp black pepper1 lb medium shrimp, peeled
Directions
Place all ingredients (EXCEPT SHRIMP) in slow cooker. Cover and cook on low for 4-4.5 hours, or until veggies are crisp-tender. Stir in shrimp. Cover again and cook 15-30 minutes, until shrimp are opaque. Remove and discard bay leaves.
