Greek Pasta Toss

Ingredients
12 oz whole wheat pasta2 Tbsp Olive oil1 medium red onion1 medium-large red bell pepper1 medium-large yellow bell pepper2 cloves chopped garlic1 pint grape tomatoes1 can artichoke herats, drained1 can medium black olives, drained6 oz reduced fat feta cheesesalt & pepper to taste
Directions
Cook pasta in large pot according to package instructions. Drain and set aside.

Heat 2 Tbsp of olive oil over low-medium heat in bottom of pot. Chop onion, bell peppers into 1" pieces and add to oil. Add chopped garlic and saute until vegetables just begin to soften, but are still slightly crisp. Add grape tomatoes and artichoke hearts, cook until heated through. Toss in olives, feta, and cooked pasta.

Serve warm or cold.

    This was wonderful. The serving is HUGE and I'm sure it would easily feed 6 people. I was really hungry tonight though. It was easy to make and looked beautiful too. - 9/8/08
