Saute corn off the cob

3 - 4 ears of corn cut off the cob1/4 cup onion1 T green pepper2 T olive oil3 tsp margarine or butter sub1 tsp salt1 tsp pepper
Cut your corn off the cob. Mince your oion and green pepper. In a saute pan heat your olive oil and margarine together. Add in the onion and pepper along with salt and pepper. Saute just until soft. Add in the corn and saute another 5 min. The corn will still be a little crisp. Feel free to coor more if you would like. This freezes very well.
