Scrambled Eggs with Spinach & Feta

Ingredients
Non-fat cooking spray, butter flavor1.5 cups Egg Beaters egg substitute2 small handful of spinach links, rolled and chopped2 Roma (plum) tomatoes, diced1.25 cups diced onion1/4 cup crumbled Feta cheesesalt and paper to taste.
Directions
Saute the onion over medium heat, in a non-stick pan, coated with non-fat cooking spray. Add the eggs, tomatoes and spinach; cook until desired consistency and reduce heat to medium.

When done , sprinkle mixture with 1/2 the feta cheese, cover and let melt for a couple more minutes. Use remaining cheese as topping for the eggs just before dishing them up.

Great served with turkey bacon and low calorie whole wheat toast.
