Zucchini Salsa

Zucchini, mincedTomato, small diceGarlic, mincedJalapeno, seeded and mincedOnion, mincedwhite vinegarolive oilsalt pepper
If you have a mandoline julienne the zucchini in long strips and then cut it with a knife into small dice
Peel, seed and small dice the tomato
Mince the garlic
Seed and mince the jalapeno (wear gloves and avoid touching sensative body parts)
Combine all of the vegatables in a bowl with the oil, vinegar, salt and pepper. Mix, and allow to marinate for 1 hour.
