Pimpkin Pie Mousse

Ingredients
2 (1 ounce) boxes sugar-free fat-free instant vanilla pudding mix2 cups skim milk (or use fat free evaporated- it makes it very rich)1 cup canned pure pumpkin1 teaspoon pumpkin pie spice1/4 teaspoon ground nutmeg1/4 teaspoon ground ginger1/2 teaspoon ground cinnamon
Directions
Put all ingredients into blender. Mix well and pour into 4 small dessert dishes. Refrigerate until they reach pudding consistency (at least 1/2 hour).

Try the cheesecake flavored pudding for an even better taste.

Consider putting this mousse in a pie crust! (Not included in nutritional analysis.)
