Slow Cooker Lasagna

1 lb ground chicken breast skinless1/2 cup onions, chopped30 ozs Italian style tomato sauce15 ozs no-salt-added tomato sauce2 tsps basil1 tsp pizza seasoning8 ozs mozzarella cheese, shredded15 ozs fat-free cottage cheese1/2 cup Parmesan cheese15 pcs lasagna noodles, uncooked
In a large skillet, cook chicken and onions until chicken is no longer pink. Add tomato sauce, basil, and pizza seasoning. Mix well and set aside. In a bowl, combine one cup mozzarella cheese, cottage cheese, and parmesan cheese. (Refrigerate remaining mozzarella cheese until lasagna cooks.) Spread one-fourth chicken mixture into 6-quart slow cooker; top with five noodles, broken into pieces to fit. Spread with half the cheese mixture and one-fourth of the chicken mixture. Top with five noodles remaining cheese mixture and one-fourth chicken mixture. Top with remaining five noodles and remaining chicken mixture. Cover and cook on low heat for 5 five hours, or until noodles are done. Sprinkle top of lasagna with remaining mozzarella cheese. Cover and let stand for ten before serving.

CONFUSEDBIRD
Loved it! I added spinach and eggplant. Only thing confusing is you say to add the "tomato sauce" with the chicken and onion mixture. I only added the small can. So then after almost being done I noticed I didn't use the jar of sauce. So I assume pour in jar and can at the same time? - 2/20/11

I am pretty new to slow cooking so I was skeptical about a slow cooker lasagna. My entire family loved it! There are 5 of us & by serving it with salad & bread I have an entire meal leftover. I did use ground turkey instead of chicken & I think I will only cook it 4 hours next time. Thanks! :) - 1/5/09

I love slow-cooker lasagna... subbing ground chicken for beef lightens it up. I also throw in a couple handfuls of cooked bulgar wheat with the chicken/onions just to add some fiber. You'll never notice it and it stretches the meat, too (also a great tip for tacos). Whole wheat noodles work fine. - 1/3/09
