Homestyle chicken soup (cuban recipe with a twist)

Ingredients
6 cups of water2 chicken breast cubed1 tsp olive oil1 small onion1/2 bell pepper3 garlic cloves1/4 tsp ground oregano1/4 cup tomato sauce1 potato cubed1 carrot sliced1 plantain 2' sliced(green to ripe)1 celery diced1 oz angel or vermicelli pasta1/4 tsp saffron (optional)
Directions
In a large pot add oil, onion,bell pepper and cook for 3 minutes then add garlic , oregano and tomato sauce cooking for another 2 minutes adding the chicken with water and cook over medium heat until chicken is tender. (20 minutes). Add diced potato, plantain and veggies and cook for another 20 minutes in medium -low heat. When the veggies are tender add the pasta and saffron and cook for another 10 minutes. Serve with lemon. Makes 6 servings.
