My favorite Meatloaf made healthy

1/4 tsp. Canola oil1/4 tsp. chopped Garlic1/4 cup each diced Carrots, Red Pepper, Celery, and onionSalt and freshly ground Black Pepper1 pound 90 percent lean ground beef1/4 cup shredded Parmesan1/4 cup low-soduim Chicken broth1 Lg. Egg1 cup cooked brown lentils2 cups packed spinich leaves, steamed,drained, and choppedCooking spray
Serves 5 6oz pieces
1.Preheat oven to 350. Heat oil in a saute' pan over medium heat. Add garlic and all the vegetables except spinich and saute' for 4 mins. Sprinkle with salt and pepper to taste.
2. In a large bowl, break up beef well with your hands. Stir in cooked vegetables, Parmesan, broth and egg. Mix well. Add the lentils and mix. Add spinach and mix again. If you wish you can add some more salt and pepper.
3. Coat a 3 by 8 inch loaf pan with cooking spray. Place meat mixture in pan and push down. Bake 35 mins or until internal temp. reaches 140F.
Let meatloaf rest in pan for 15 mins. before slicing
