6 small Yukon Gold potatoes, halved1 Tbsp extra virgin olive oilSalt and freshly ground black pepper to taste1 Tbsp chopped fresh parsley

1. Fill a large sauce pan with water. Add potatoes and bring to boil over medium high heat. Cook for 30 mins. or until tender with fork. Drain well and place in large bowl.. Mash potatoes with fork. Drizzle with olive oil and season with salt and pepper to your taste. Serve potatoes topped with parsley
