Quick Single Serving Cabbage Soup

Ingredients
1 tsp olive oil2 oz ground beef2 tbsp chopped onion1/4 cup grated carrot1 stalk celery1 cup chopped cabbage1 cup beef stocksalt and pepper to tastetoast or bun
Directions
In a medium sized sauce pan brown ground beef , celery and onion in the olive oil. Add the rest of the ingredients except bread and bring to the boil, turn heat down and simmer till cabbage and carrots are done - approximately 15 minutes. Enjoy with bread or buns to dip.

    Tastes great! Wondeful way to get in the veggies. Mine was a little different. I had to put 2 cups of beef broth because it dried up fast, I put double the ground beef (because I need 4 oz protein on my plan) and I added a tsp of minced garlic. Deliious - 2/14/15
