Healthy Veggie Soup

Ingredients
2 cans mixed vegetables2 cans diced tomatoes undrained3 small potatoes chopped1 small onion diced2 cans of beef brothOreganoBasilItalian Seasoning
Directions
First add the 2 cans of beef broth to a small stock pot. ****8 beef bouillion cubes with 8 cups of water can be substituted to leave out a lot of the sodium and fat****. You can add 2 extra cups of water if you choose. If you plan on cooking with potatoes or noodles, this is probably a good idea.
Add the diced tomatoes to the broth and stir. Then add the mixed vegetables, potatoes, and onions. Lima beans, spinach, and squash can also be added- any vegetable you love, this is just a base to start from. Add oregano, basil, and italian seasoning to taste. Bring to a boil. Simmer for 30 minutes and serve! Makes 6-8 servings.
