crockpot curried red lentil soup

Ingredients
2 c. red lentils6 c. water1 can 98% FF chicken broth1 onion diced1 red pepper diced1/2 c. raisins2 tsp. curry powder2 tsp. ginger2 tsp. cinnamon1 tsp. salt1 tsp. pepper
Directions
Sort & rinse lentils until water runs clear. Add all ingredients to crockpot and cook on low 8 hrs. Adjust spices to your liking.

Can be made vegetarian by subbing chicken broth with vegetable broth.

    I fried up the onion and raisins with a veggie bouillon cube, a bit of oil, and added some water to make a 'broth' before putting it in the crockpot. Can't wait to try it! - 12/31/10
