Ellis Haller's French Pancakes

Ingredients
1 c. flour6 tbs. confectioner's sugar1/2 tsp. salt1 c. milk2 eggs
Directions
Mix flour, sugar, and salt. Add milk, stirring until smooth. Add eggs and beat well until smooth.

Melt a small amount of the butter in pan. Use a large serving spoon or small ladle to pour pancake batter into pan, making 6-7 inch pancakes in diameter one at a time. Flip with spatula when small bubbles appear. Add a little butter between each pancake to keep the pan greased.

Spread lightly with jam, butter, nutella, or top with fresh berries.
