Slow cooker Chicken Maque Choux

4 chicken breasts (boneless, skinless)1 tsp. creole seasoning1 14 oz can corn (low sodium)1 14 oz can diced tomato (low sodium)1 stalk celery, diced1 cup diced bell peppers3 cloves garlic, diced1 onion, chopped1 cup sliced mushrooms1 jalepeno, diced
1. Place chicken breasts in slow cooker. Season with Creole-style seasoning to taste. Stir in tomatoes with liquid, corn, celery, bell pepper, garlic, onion, mushrooms, and jalapeno pepper.
2. Cook on Low for 8 to 10 hours, or on High for 5 to 6 hours.
Serve over brown rice for a complete meal. Add cayenne or tobasco for any extra kick. I also like to add shrimp or sausage for a more "gumbo" feel.
