Curried Chicken and Coconut Rice

Ingredients
4 chicken breasts2 big carrots1 red onion2 cups or so of cubed sweet potato (the orange ones)2-3 small red potatoes, cubedabout a cup of chopped bell peppers, any color1 1/2 cups orange juice2-3 cloves garlic1 tsp tumeric3-4 tsp curry powder1 tsp ginger powder 1 tsp all spice *rice*3 cups rice2 cans of coconut milkabout 2 cups water

So this is in my slowcooker at the moment, i just added it to the calculator to add to my tracker. try it if you dare :-)

take 4 chicken breasts and cut into strips.... approximately 12 -15 strips total. place in bottom of slow cooker. take 2 big carrots and slice into medium-thickness slices, throw those in too. Peel and cube your Sweet potatoes, cube, and throw into pot. cut each potatoe into about 6 chunks, throw em in. make sure your potatoes arent SMALL otherwise youll come home to chicken strips and mashed potatoe soup. roughly chop your onion and peppers, throw on top of everything. chop your garlic and set aside. pour 1.5 cups or so of OJ into a bowl. add all seasonings and garlic.. mix. pour over everything in the slow cooker. Turn cooker on low and cook for 3-6 hours or so.

whenever youre ready, allow like 30 minutes for the rice to cook. i've never made the coconut rice, so cross your fingers.... take 2 cans coconut milk and about 2 cups of water, bring to boil. add about 3 cups rice, stir, and let simmer till done. I hear its tasty.

I guessed at the quantity.... my slow cooker looks like it could be like 8-9 servings of curry, but for rice, it would be 6 .5 cup servings, so I said 6 servings..... the calories are actually lower then, since you wont actually use a FULL 1/6th recipe of curry.... get it?
