Ingredients
2 tsp olive oil4 cloves garlic, minced1 (28 oz) can crushed tomatoes (or diced)1/4 tsp dried thyme1/4 tsp dried oregano1/2 tsp saltpinches black pepperwhole grain pasta - about 4 cups, cooked
Directions
*makes about 5 cups, or enough for 4 1-cup servings of pasta

Cook the GimmeLean sausage in the olive oil - it doesn't contain enough fat to brown itself, so you have to add that. It takes a while to brown without burning - just keep breaking it up with the spoon, and be patient.

After you're finally satisfied with it, add all the other ingredients, and let it simmer until the flavors are well combined (about 30 minutes, although longer is fine). If you use crushed tomatoes, it will look like traditional pasta sauce. If you use diced, it will be "chunky."

**Leaving this in the crockpot on high for 4 hours works well, too - I like going out to run errands for the afternoon and coming home to pasta sauce, or making it on a weekend to use later in the week.

I usually throw in an onion or green pepper or mushrooms, etc., if I have them on hand, but I left that out of the ingredients so I could just get the basic nutritional information, without random additions.
