Mexican-Style Anasazi Beans

6 cups low-sodium vegetable broth1 lb. dried anasazi beans2 Tbsp. low -sodium taco seasoning mix1 jar of salsa of choice
1 - Cover beans in water, and soak overnight.
2 - Drain and rinse beans. Bring broth up to a boil in a large pot on high heat. Add beans, and bring back up to a boil.
3 - Stir in taco seasoning, bring down to a simmer, and cover. Allow to simmer 2-3 hours, or until tender.
4 - Stir in salsa, and simmer on low for another 10-15 minutes.
Serve over rice for a complete protein.
