Curried Mango Chicken Stir Fry

Ingredients
2 large boneless skinless chicken breasts, cut into chunks2 tbsps of oil (divided)1 onion, thick sliced1 bok choy, chopped2 peppers, red/yellow/orange or green, chopped2 cups sliced mushrooms3 cups bean sprouts1/2 bottle PC Curried Mango sauce
Directions
chop all ingredients in advance. Pour 1 tbsp of oil into wok/skillet, heat, add chicken chunks and cook through. Remove to bowl. Add "hard" vegetables (onions, bok choy, then peppers, and as they soften add "softer" vegetables, mushrooms, beansprouts. Reintroduce cooked chicken chunks. Pour 1/2 bottle of sauce over all, toss and heat through.
