Zucchini light soup

Ingredients
2 large zucchini, 400 grams2 large onions, raw4 tbsp olive oil5 cups water tap4 tsp salt
Directions
Add to water and bouillon in large soup pot.
Slowly bring to boil while preparing vegetables.
Chop zucchini and onions in 2 inch pieces.
Add to soup pot and bring back to boil. Cook until tender (about 15 minutes).
Add the olive oil.
Put in a food processor or blender & puree.
Serve with salt to taste.

    Just a suggestion (but maybe this is not as good for you?)--sautee the zuke and the onion in the olive oil in the beginning for about five minutes, then add the stock and cook until tender and ready to puree. This was a very good soup, low calorie, and satisfying. - 9/18/07
