vegtable quiche

Ingredients
3 eggs1/2 cup egg whites1/2 cup milk1/2 cup2% shredded cheese2 teaspoons olive oil1/2 cup chopped onion1/2 cup chopped peppers1 cup spinach1/2 cup tomatoesspices, example nutmeg, dill1 frozen prepared whole wheat pie crust
Directions
Remove crust from freezer. Stir fry onion and pepper in olive oil. Add spinach the last minute. Mix eggs, egg whites and milk in bowl. Mix well. Add veggies to crust top with cheese pour egg mixture over all. Bake at 325 for 30 - 45 minutes. Top with tomatoes the last 10 minutes.
