1/2 small white onion 2 cloves garlic 2 T. olive oil 1 lb. extra lean ground beef1 egg 2 T. grated parmesan cheese 1 T. dijon mustard (check ingredients for no sugar) 1 1/2 T. dried parsley 1 1/2 t. dried oregano 1/4 t. salt 1/8 t. ground black pepper 1 jar (26 oz) no-sugar-added pasta sauce 1 8 oz. pkg reduced fat mozzarella cheese
1. Preheat the oven to 350. In a food processor or mini-chopper, chop onion and garlic medium to fine. In an 8-inch skillet, heat olive oil over medium heat and cook onion mixture, stirring occasionally, 5 minutes or until onion is translucent. Remove from heat and let cool completely.
2. In a large bowl, combine onion mixture with remaining ingredients except the pasta sauce and cheese. Shape into 20 (2 inch) meatballs.
3. In a 13 X 9-inch baking dish, arrange the meatballs. Bake 25 minutes; pour sauce over meatballs, then sprinkle with mozzarella cheese. Bake an additional 10 minutes or until meatballs are thoroughly cooked. Remove from oven and let stand 5 minutes before serving.
