Black Bean Soup

1 sm or medium red onion chopped1 slice of reduced fat bacon4 large carrots chopped2 stalks celery chopped3 cloves garlic chopped3 1/2 cups organic fat free chicken broth1/2 cup water1 jalepeno diced with most seeds and ribs removed then chopped2 cans black beans1 can diced tomatoes1/3 cup cilantro1 small lime juiced2 tsp ground cumin1 tbsp mexican oregano1 tsp cracked black pepper
Start by chopping the garlic then set it aside!!!chop the bacon and fry in the pot, add onions, jalepeno, carrots and celery. Cook until carrots are slightly tender. Add tomatoes, water, broth and beans then add the spices. Cook until the vegetables are completely cooked. Now you can add the chopped garlic. Cook for an additional 2 minutes then remove from heat and add it the juice from one lime and the chopped cilantro.
Serve alone or with a dollop of yogurt cheese or sour cream and chives.
