Black Bean Tortilla Bake

Ingredients
3 garlic cloves, minced1 small onion, chopped (approx. 1 c.)1 - 8oz can tomato sauce2 - 14oz cans petite diced tomatoes2 - 15.5 oz. cans black beans, rinsed & drained1 T. chili powder1 T. cumin powder2 T. fresh cilantro, choppedsalt & pepper to taste12 soft corn tortillas8 oz. lowfat (2%) shredded cheddar cheese
Directions
1. Preheat oven to 350.
2. Spray a large skillet with cooking spray.
3. Add garlic, onion and cook on med. heat until onion is tender.
4. Stir in tomatoes, tomato sauce, chili powder, and cumin, and cook additional 5 min.
5. Stir in beans, cilantro, salt & pepper.
6. Spray a 13x9 baking dish with cooking spray.
7. Layer 6 tortillas, 1/2 bean mixture, and 1/2 the cheese, repeat layers.
8. Bake 20 min. covered, then 10 min. uncovered or until bubbly.

Additional optional toppings: fresh cilantro, light sour cream, salsa.

    I tried this and it tasted fairly delicious - unfortunately, I didn't have any real cheese, so I used some salsa con queso; this tasted great, but stopped the bottom from being crispy. I would definitely try again - 12/13/09
