Ingredients
16 oz frozen SpinachI recipe non fat paneer cheese( SparkPeople recipe)not included in nutritional values 3 T Olive oil, divided2 med onions, chopped2 T each of minced garlic and ginger1 14 oz can petite diced tomatos2 t Garam Masala powder1 t cumin2 t Coriander powder1/4 t Cayenne pepper1/4 t Smoked paprika1/4 t TumericSalt to taste
Directions
Saute onions in 2T oil until translucent. Add garlic and ginger, stir until fragrent. Add the spices, spinach, and tomatos, let simmer 15-20 mins.

Meanwhile, cut the paneer cheese into bite sized chunks, and gently fry them in the 1 T olive oil until golden brown and slightly crispy. Add this to the spinach mixture, stirring gently.

Serve with optional rice or Indian breads.
