Chickpea Onion Soup

Ingredients
2 c. sliced onions1 clove garlic (diced)4 c. chicken broth (I use Swanson Natural Goodness)1 c. chickpeas (I use canned, rinsed and drained)fresh thyme (leaves off a couple of sprigs)1 bay leafred pepper flakes (to taste)salt (to taste)fresh ground black pepper (to taste)
Directions
Using a nonstick pot coated with non-stick cooking spray cook onions over medium heat until translucent. Add garlic, cook one minute. Add chicken broth, chickpeas, fresh thyme, bay leaf, crushed red pepper flakes, salt and pepper; bring to a boil. Simmer 10 minutes. Remove bay leaf before serving. Makes 4 servings.

Feel free to sub ingredients. Vegetable or beef broth would work great. I think I added a dash of celery seed while I was making this. If you don't have any fresh thyme you can use a teaspoon of dried thyme or other herbs (fresh or dried) you may have on hand.
