Easy Peanut Brittle

Ingredients

1 1/2 cups of dry roasted peanuts1 cup of sugar1/2 cup of corn syrup (lite)1 pinch of salt1 tbsp of butter1 tsp of vanilla extract1 tsp of baking soda
mix in large glass or microwaveable bowl: peanuts, sugar, corn syrup and salt. Microwave on high for 6-7 minutes ( roughly at 700 watts), stir briefly once halfway through. Mixture should be bubbly and peanuts should appear slightly browned. Stir in butter and vanilla and microwave an additional two minutes.
Remove from microwave and quickly stir in baking soda ( HINT, bowl will be hot you may want to consider wearing pot holers) stir until mixture is "foamy/fluffy" in appearance. Spread in to pre greased cookie pan and allow to cool for 15 minutes. Once cooled, break apart in pieces and store in air tight containers... Enjoy!
