Tortellini with Tomatoes, Ricotta and Basil

Ingredients
900g Tortellini, fresh or frozen28oz canned tomatoes, diced or whole1 onion, minced3 cloves garlic, minced4Tbsp chopped basil1/2 cup ricotta cheese, reduced fatolive oilcracked pepperparmesan cheese(optional)
Directions
While pasta is cooking, saute onion and garlic in olive oil until onion is soft. Add tomatoes and simmer to reduce liquid. Add basil and ricotta just before serving. Combine pasta and sauce. Season with cracked pepper and/ or parmesan cheese if desired.
