Mexican Brown Rice

Ingredients
1 cup uncooked brown rice1/2 cup chopped onion (1 medium onion)1/2 cup chopped bell pepper (1 medium pepper)1 clove chopped garlic8 oz. crushed tomato2 cup low-sodium chicken brothSmart Balance cooking spray
Directions
Toast raw rice in pot over medium-high heat
Add 3 second spray of Smart Balance spray to rice for flavor
When rice is getting brown and done, add onion, pepper, and garlic. Sautee it all together for a minute or so. Not too much.

Add:
2 cups water
crushed tomato
chicken broth

Bring to a boil and stir it all together well.
Reduce heat to a simmer and cook for 35-40 mins until rice is done.
