My Healthy Vegan Pancakes

Ingredients
1 cup wheat flour1 c lite soy milk1 tsp baking soda1 tsp baking powder1 tsp cinnamon1 tsp vanilla extract
Directions
1. Combine all dry ingredients (flour, baking soda, baking powder, cinnamon) in a medium bowl. Add the soy milk and vanilla extract, and stir until just mixed. The batter will be somewhat lumpy.
2. Heat a non-stick pan over medium heat. You can add cooking spray if you want. Use a big spoon or ladle to drop batter onto the pan. Cook until the edges turn brown and there are bubbles on the top. Flip and cook for a couple minutes more.
Makes 6 pancakes (3 servings of 2 pancakes)
