Zucchini Pie (1/6 of recipe)

Ingredients
1 1/2 c. zucchini, grated1 tomato, chopped1/2 c. onion, diced2 eggs, beaten3/4 c. bisquick1/2 c. corn kernals, fresh or frozen3/4 c. shredded cheddar
Directions
Preheat oven to 350 degrees. Lightly butter 9" pie plate. In bowl, mix zucchini, bisquick, tomato, corn, onion, cheese and eggs. Pour in pie plate. Bake 45 min. Do not cover while baking.

Serves 6.
