Turkey Meatloaf Muffins with veggies

Ingredients
Ground Turkey 1 lb.1 large eggcelery stalk 7.5"-8"2 carrots 5.5"squash 5 slices3 slices whitewheat breador 1 cup breadcrums/oats2 garlic clovesonion powdersalt and peppernutmeg1 Tbs. ketchup or BBQ sauce1 Tbs. lite soy sauce1 Tbs. oyster sauce orworcestershire or hoisin sauce
Directions
Puree veggies
mix all ingrediants together in bowl
scoop into cupcake or muffin pan
Make 12 equal size mini-meatloaves

bake at 350 degrees for 30 minutes

    This is a great way to sneak vegetables into your meals. I am going to make this today using red, green, orange bell peppers, carrots, celery, cauliflower since I have no squash on hand. Wish I did. I will come back and comment on it again after I have made it. - 6/21/09
