Soup à la Crécy

Ingredients
2 leeks thinly sliced500g of carrot thinly sliced2 tsp of dried thyme leaves, crumbled1 tsp of cracked black peppercorns2 bay leaves6 cups of vegetable stock (chicken stock vegetarian too)
Directions
In a large skillet heat the carrots and leeks until carrots are softened. Add thyme, peppercorn and bay leaves, stir for one minute. Transfer to slow cooker, add stock and stir well. 4 hours at high and 8 hours at low. Discard bay leave and purée the soup on a blender or food processor! Enjoy! give 4 serving of 1 and 1/2 cup.
