Ingredients
Onions, red, 1 small, finely choppedOlive Oil, 2 tsp Garlic, 2 cloves finely choppedGinger Root, 2 tsp finely choppedCoriander, fresh, 1 serving chopped1 tsp dried coriander0.5 tsp turmericpinch chilli powderCarrots, raw, 1 medium finely dicedPeas, frozen, 0.75 cup Potato, 1 medium (2-1/4" to 3-1/4" dia.) finely diced
Directions
Heat oil in pan, add onion and fry for few mins to soften.

Add the garlic and ginger and dried spices, cook on a low heat for few more mins.

Add the carrots, potato and peas with a little water, season to taste and cook over low heat until vegetables have softened, approx 10 mins.
