Ingredients: * Onions, raw, 1 cup, chopped * Garlic, 2 cloves, chopped * Olive Oil, 2 tbsp * Yellow Sweet Corn, Canned, .5 cup * Broccoli, cooked, 0.5 cup, chopped * Feta Cheese, .33 cup, crumbled * Parmesan Cheese, grated, 2 tbsp * Cheddar Cheese, .75 cup, shredded * Egg, fresh, 9 largeItalian Seasoning to taste
Preheat oven to 350F.
In a large oven-proof frying pan, saute onion and garlic in olive oil until translucent. Add corn, broccoli and Italian seasoning, remove from heat.
Beat eggs, stir into other ingredients in frying pan. Sprinkle cheeses on top, ending with the cheddar.
Place frying pan uncovered in the oven and cook for 20 minutes.
Makes 3 generous servings.
