1.5 cups white flour1.5 cups whole wheat flour1 tsp salt1 cup water1.5 tbsp I Can't Believe It's Not Butter or similar
Makes 6 6" round loaves
Sift together flours and salt, add water and stir to make a soft dough. Turn out onto lightly floured surface and knead 3-4 minutes until smooth. Place in lightly oiled bowl and cover with plastic wrap. Let sit for an hour.
Divide dough into six balls and flatten with your palm into a disc. cover with plastic wrap and let sit for 10-15 min. Heat oven to 450 F and place cookie sheet in heating oven. Place 2-3 loaves on the cookie sheet and bake 8-9 minutes until slightly browned on top. Brush hot roti with melted margarine and serve warm.
For added fiber use all wheat flour or whole grain flour... but this will alter the nutrition info.
