Salpicao - chicken

Ingredients
3 well seasoned grilled chicken breasts, chopped11oz can of corn, drained2 cups of frozen peas, defrosted and drained5 medium carrots1/2 cup EACH of parsley, scallion, green olives (all chopped)4 Tbsp mayosalt & pepper to taste
Directions
Makes 10 1-cup servings
season and cook chicken (use herbs of your choice), chop
cook carrots and chop into small pieces
chop parsley, scallions, green olives
thaw and drain peas
drain corn
mix all ingredients and in large bowl. Add salt and pepper to taste serve cold or room temperature.
