2 Tb olive oil2 onion, chopped1 red pepper1 green pepper4 tomatoes, peeled & chopped1 garlic clove, crushed (or more, to taste)1 large egg and 3 large egg whites1 Tb waterfreshly ground black pepper
Makes four servings, divided equally.
Saute onion until soft, then add thinly sliced peppers. Cook together on med-low heat for about 5 minutes. Add tomatoes and garlic and black pepper and cook for 5 more minutes. Pour eggs over veg. and cook for 2-3 mins stirring occasionally until scrambled. Serve over toast.
