Mixed Grain French Toast w/Egg Beaters - 1 serving = 2 slices

Whole grain bread - 4 slicesEgg substitute (Egg Beaters or equivalent) - 3/4 cupMilk 2% - 1/3 cupSplenda (or equivalent sugar substitute) 1 1/2 tspVanilla Extract -1/2 tsp (adds sweetness with no additional calories)Salt - pinch
I begin by drying the bread slightly, placing the slices in a toaster or toaster oven set on low. While this step is not necessary, drying the bread allows it to soak up the egg and milk mixture better. In the end your French toast will have a more custard-like center.
Mix egg substitute, milk, splenda, vanilla extract and salt together. Pour into a large flat bowl or baking dish. Place two slices in the mixture and allow to soak for at least 1 minute.
While the bread is soaking set the heat on a flat griddle at medium to medium high.
Carefully turn the bread in the egg mixture and allow to soak for an addition 30 seconds.
Once the griddle is hot, place the slices of bread on the griddle. While the toast is cooking, place the other two slices of bread in the egg mixture to soak.
Turn the toast once the first side is GBD (Golden Brown and Delicious). Turn the slices in the egg mixture.
Once the toast is done on both sides, place on a warmed plate and serve.
Makes two 2-slice servings.
