Ingredients
1/2 onion6 small indian eggplants1/2 tsp salt1/2 tsp chilli powder3 tbsp oil1 tsp ginger garlic paste1 medium potatoe1/2 small tomatoe
Directions
Makes 4 servings

Heat oil on high add sliced onions fry untill browned then add ginger garlic paste, tomatoe (chopped), salt, chilli powder and cook for 5-10 mins and then add eggplant (small cubes) and potatoes (cubed) and cook on medium heat for 20mins. Then add fresh cilantro on top.
