Healthy Delicious Vegetable & Meat Loaf - For Crock Pot

Ingredients
2 lbs extra lean ground beef or turkey1/2 cup quaker oats1 cup grated or finely chopped carrots1/2 cup finely chopped celery1 cup finely chopped mushrooms1/2 cup onions finely chopped1/4 cup green peppers finely chopped1 clove garlic finely chopped1 large egg1/4 cup milk (2%)1 tbsp ground black pepper.1/2 cup low sodium catsup3 larges carrots (peeled & sliced lenthwise.) Saved until just before cooking.
Directions
Mix in large bowl the following ingredients:
Egg
Milk
Catsup
Pepper

Stir in the oats and mix until all oats are moistened.
Add in vegetables and garlic one at a time until they are all mixed into the oat mixture.

Mix in the ground beef or turkey and mix until well blended.

Shape meat mixture into a loaf and place in Crock Pot. Place sliced carots on top of the meatloaf and cook on low for 8-10 hours.

Great with a baked potato and a green vegetable!
